What’s Ketosis Anyway?
Ketogenesis has existed as long as humans have. If you eat a very low amount of carbohydrates, you will starve your body of glucose, its primary source of fuel. Since your body still needs the energy to carry out its basic metabolic functions it turns to ketones for fuel. Ketones are energy molecules produced by your liver when it metabolizes fat.

My second meal was a chicken fajita salad. That was really easy to make (much easier than the Southern Barbeque Steak). That was good because I was so tired after work today and I did not want to sit there and spend a whole lot of time making an elaborate meal. The portions were huge and in fact, I could almost say they gave me too much chicken because I went into the refrigerator and added more lettuce to balance out the chicken thighs. I’m not really sure how ‘Cuban’ the Cuban spices were but they added a really nice flavor to the meat. I would’ve preferred chicken breasts over thighs, however, I’m guessing this is how they manage to keep the price down as the organic chicken breast is quite expensive.

My favorite meal was the Malaysian Spiced Pork Patties. Those were so exotic and yummy! They were also surprisingly easy to make and the vegetables were fresh and delicious. It actually tasted like a dish I had in Kuala Lumpur Malaysia. Like the other two meals, it was easy to make and took about half an hour. I did have to cook the pork patties a little longer than the instructions but that could be because I didn’t make them the 1/2 an inch thick like the instructions called for. An important note though, don’t expect to find this dish readily available in Malaysia. The reason being that Malaysia is a Muslim nation and pork is strictly forbidden in Islam. I was pretty hungry so I actually ate both servings in one day!
Overall I found the directions were pretty easy to follow. The recipes are written and illustrated with step-by-step photographs which I found to be extremely helpful. Some may not like the relatively high amount of packaging they used. I called the company and they said when they used to just put all the ingredients in the box with color-coded labels too many customers complained. That’s why they switched to wrapping each meal ingredients in a paper bag.
It makes eating keto organically a lot easier than having to go out and buy the ingredients yourself
The meals are super easy to prepare. It even made me feel like a real chef! LOL
It provides a good introduction to the ketogenic lifestyle

Overall Green Chef is a solid meal-kit company delivering high-quality organic food. That being said their prices seemed high to me even with their steps to keep them low such as using chicken thighs instead of chicken breasts in the Chicken Fajita recipe. Green Chef isn’t for those on a tight budget.
The appeal of Green Chef comes from the ‘green’ aspect and green ain’t cheap. Eating organic food and worrying about biodegradable packaging it is a reflection of privilege. At least Green Chef puts organic healthy eating within reach of more people than ever before and I commend them for that. Any attempt to eliminate cancer-causing pesticides from our food supply will always have my support. For that reason, I will continue to use this company and recommend you give them a try as well.

What low-carb vegetables are good? There’s a very simple rule:
Vegetables growing above ground are low carb and can be eaten freely.
Vegetables growing below ground contain more carbs, so you’ll have to be more careful with them (especially potatoes).

All our lives we’ve been told to eat our vegetables because they’re good for you. Surprise surprise it turns out these vegetables aren’t as good for you as you might think.
1. Corn on the cob. One ear of corn 6 grams of sugar and 19 grams of carbs. That’s 20% of your daily recommended sugar intake in one ear of corn
2. Yams. One cup of yams has about 42g of carbs which is 14% of your recommended carbohydrate intake and of course would knock you out of ketosis with the quickness
3. Parsnips. These guys have 6 grams of sugars and 24 grams of carbohydrates!
4. Potatoes. Most people know that french fries aren’t really a vegetables but it’s not just the frying that makes french fries bad. The potatoes themselves are no friend either. One cup of potatoes has over 33 grams of carbohydrates in it. That means just half a cup of potatoes is enough to knock an adult male like me out of ketosis.
5. Quinoa. Often touted as a healthy grain and popular with new age types this grain is actually one of the worst for you. One cup of Quinoa has a whopping 109 grams of carbohydrates. If you want to get out of ketosis eating something with quinoa is a great way to do it
6. Beans. While not a musical fruit this root vegetable is chalk full of carbs and sugar with 121 grams of carbs and 4 grams of sugar respectively. That’s more carbs than a McDonalds Big Mac! That’s enough to make anyone toot

Here are the ten greatest low-carb vegetables, tasty and nutritious and with very few carbs. They’re sorted by how popular and useful they are in low-carb cooking.

Despite being a full grown man my favorite food is still nachos and you get to eat those while still on keto! Keto Nachos Prep Time 30 Mins
2 cups shredded sharp cheddar cheese
1/2 cup grated Parmesan cheese
1 teaspoon cumin 1/2 teaspoon garlic powder
1/4 teaspoon chili powder
1 cup cooked taco seasoned ground beef
1/4 cup shredded sharp cheddar cheese
2 tablespoons chopped onions
1/4 cup diced tomatoes
1/4 cup jalapenos
1/4 cup sliced black olives
2 tablespoons guacamole
2 tablespoons sour cream
Preheat the oven to 400°F. Line a rimmed baking sheet with parchment paper or a silicone baking mat. Sprinkle the cheddar cheese on the parchment paper in a thin layer, in the shape of a rectangle.
Sprinkle the Parmesan cheese evenly over top of the cheddar cheese. In a small mixing bowl, combine the cumin, garlic powder, and chili powder. Sprinkle the seasoning mix evenly over the top of the cheeses.
Bake on the middle rack for 8 to 10 minutes, checking every minute to ensure that it does not burn. Remove the baking sheet from the oven and let the cheese cool for 10 minutes.
Peel the cooked cheese away from the parchment paper and cut lengthwise into strips. To make this easier, I recommend using a pizza cutter or kitchen shears. After cutting the cheese into strips, then cut each strip into triangles.
Transfer the individual chips back to the parchment paper and broil on high for 1 to 2 minutes. Let the chips cool and crisp up – about 30 minutes. Pile the chips on a plate and cover with all of your favorite nacho toppings.
Sadly beef jerky isn’t keto like many people think. Many brands are chalk full of sugar and other preservatives to extend their shelf lives. If you want to get the best results you should make your own keto jerky. You can also have real keto jerky and other snacks delivered to your door. Here is a free recipe for keto jerky!
Pour a can of zevia into a gallon size ziplock bag and add the soy sauce, rice wine vinegar, liquid smoke and add the seasonings. Trim the top round of any excess fat and cut into strips to your desired size. I like them on the smaller side for easy grab and go!
Add the cut up strips into the marinade and shake around. Seal the bag (removing any excess air) and place the bag into a bowl so there is no leakage.
Place the bowl into the fridge for at least 4 hours and up to 24 hours. Once the meat has marinated remove the bowl from the fridge and pat the strips dry with paper towels (the marinade will have already penetrated the meat enough!).
Using the bamboo skewers pierce the tip of the meat so you have anywhere from 5-7 pieces of meat hanging from each skewer. Set your oven to its lowest setting (we did 170 degrees) and hang the skewers through the grates in the oven so the strips are hanging.
Bake for 4 hours (for thicker strips you may need to bake longer), remove from oven and serve immediately or store in the fridge up to 1 month.
NOTE: For every 3lbs of raw meat you’ll get 1lb of cooked delicious jerky!
